Roots Latin Grill started as an idea when friends and family suggested owners Luis and Gio bring a new option for dining to Springfield. “I am from Bolivia where food is the center of social life in Latino culture. Food is a way to bring family and friends together. Latin American food is unknown here, so I knew it was going to be a risk, but so far the response has been great” said Luis. 

Roots Latin Grill is located on the west side of Springfield. We worked hand-in-hand with Luis and his wife to create a unique space. Sangamon Reclaimed provided design, fabrication, and installation including a custom bar, back bar, feature wall, and floating shelves. We also brought in Concrete Camillion to create a concrete bar top and polished concrete floors. 

Luis said Sangamon Reclaimed was the right fit to help create a clean industrial chic concept. “Based on the amazing work I saw from them it was a no brainer. Having the Sangamon Reclaimed team as part of the project was amazing. They had so many suggestions and ideas it felt natural and easy to work with them. They have an innate talent and passion for what they do and that is hard to find. The quality is amazing, and I couldn’t be happier with the results.” 

Luis and Gio live in Springfield with their two sons.
